Pepper and chickpea medley
This dish is high in vitamin C – and tastes good too.
 
 
Ingredients:
 
1 tbsp olive oil
 
4 cloves garlic – finely diced
 
1 red pepper – coarsely diced
1 yellow pepper– coarsely diced
1 green pepper– coarsely diced
1 zucchini– coarsely diced
1 red onion (medium)– coarsely diced
 
2 cups cooked chickpeas or 1 540 ml can
 
2 tbsp dijon mustard
 
sea salt and pepper to taste
 
pinch of cayenne pepper (optional)
 
 
 
Instructions:
 
1.sauté the garlic in the olive oil for 1 minute on low to medium heat – in a large pan
 
2.add the peppers, zucchini, and onion and sauté for about 5 minutes (the veggies should be crispy)
 
3.add the dijon mustard, salt, pepper, and cayenne pepper and cook for one more minute
Makes six to eight servings.
 
 
Notes:
 
More olive oil can be added after cooking.
